Grilled Vegetable Skewers
Ingredients:
- Assorted vegetables (such as bell peppers, zucchini, cherry tomatoes, red onions, and mushrooms)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (such as rosemary, thyme, or basil), chopped
- Salt and pepper, to taste
Instructions:
- Preheat the grill to medium heat.
- Cut the vegetables into bite-sized pieces.
- In a bowl, mix together the olive oil, minced garlic, fresh herbs, salt, and pepper.
- Thread the vegetables onto skewers, alternating the different types for variety.
- Brush the vegetable skewers with the olive oil mixture.
- Grill the skewers for about 8-10 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and serve them as a delicious and colorful side dish.
