Grilled Vegetable Skewers

Ingredients:

  • Assorted vegetables (such as bell peppers, zucchini, cherry tomatoes, red onions, and mushrooms)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as rosemary, thyme, or basil), chopped
  • Salt and pepper, to taste

Instructions:

  • Preheat the grill to medium heat.
  • Cut the vegetables into bite-sized pieces.
  • In a bowl, mix together the olive oil, minced garlic, fresh herbs, salt, and pepper.
  • Thread the vegetables onto skewers, alternating the different types for variety.
  • Brush the vegetable skewers with the olive oil mixture.
  • Grill the skewers for about 8-10 minutes, turning occasionally until the vegetables are tender and slightly charred.
  • Remove the skewers from the grill and serve them as a delicious and colorful side dish.
